2-3 Yams, washed and cut into 1/2 inch strips
1-2 tbsp Coconut oil, melted
1-2 tsp Paprika or gluten-free taco mix
To taste Salt and Pepper
- Preheat the oven to 400C and line a baking sheet with parchment paper.
- Toss cut yams with coconut oil and spices, mixing until well coated.
- Place in oven for 35 minutes or until fork-tender. Place hot yams on serving platters and top with your favourite Mexican condiments: Guacamole, Salsa Verde, Grated Cheese, Salsa, Hot Peppers etc.
